chocolate_egg_fudge When I was little I used to hate fudge. I hated the thick consistency; it always reminded me of tootsie rolls which I had always considered filler candy and I was just not into it. Things have changed and these days I’m definitely a fan. I can only handle a small piece at a time because it’s so rich, but my favorite kind of fudge is one with mix-ins. Today we have an Easter inspired fudge, studded with coconut flakes, pretzel bits, marshmallows and topped with candy coated chocolate Easter eggs!…specifically Cadbury Easter Eggs. Those things are just so perfect, you know? Every year I find myself buying an economy sized bag of them, but then after eating my way through a third of the bag, I usually get sick, put the rest of the bag in the pantry, only to eventually throw them out after 2 to 3 months of just sitting.

This year I refuse to let my huge bag go to waste, soooo…enter Coconut, Pretzel and Marshmallow Fudge! This recipe is so freaking easy, only requires a handful of ingredients and make GREAT treats for friends and family. You can also swamp the mix-ins out for something else to your liking like crushed nuts, potato chips, toffee bits, crushed peppermints, the list goes on and on.

So if you’re like me and hoard a huge bag of those candy coated chocolate eggs around this time of year, I highly recommend using a mere cup or two on this fudge! Enjoy! xx, Jenny

Coconut, Pretzel + Marshmallow Dark Chocolate Fudge
Makes 1 (9”x12”) pan

4 cups semisweet chocolate chips
1 (14ounce) can sweetened condensed milk
1/3 cup unsalted butter, softened
1 cup sweetened coconut flakes
1 cup broken up mini pretzels
2/3 cup mini marshmallows
2 cups broken up candy coated chocolate covered eggs (such as Cadbury Easter Eggs)

1. Place chocolate chips, condensed milk and butter in a large double boiler and place over medium-low heat. Once chocolate and butter begin to melt, gently stir together until the mixture has completely melted and is smooth.
2. Fold in the coconut and pretzels and remove from heat.
3. Allow mixture to cool for 2 to 3 minutes before folding in marshmallows.
4. Pour mixture into a 9”x12” baking dish and smooth the surface. Sprinkle the broken chocolate eggs over the top and gently press into the fudge. Allow the fudge to set, about 4 hours.
5. Cut into bite sized pieces and serve.

    The toppings on that fudge look like the stuff dreams are made of. I might add a caramel drizzle on mine…yummmmm
